Teams are strongly encouraged to utilize fish, fowl or game that they have harvested themselves or have been harvested by other hunters and anglers. However, use of fish, fowl, or game species that are also commercially available does not result in disqualification. A cooking team may consist of a group of individuals, a couple, or a single individual. You must fill out a cook team form, available at the Main Street office or by emailing Jamie Sowell at jamie@tatecountyms.com. Cost to enter is based on chart below. PRE-REGISTRATION IS REQUIRED BY February 21st. Spots at the cookoff will be assigned and emailed to each team prior to load in on Friday, February 28th. Registration and set up begins Friday, February 28th 5:00pm. A representative from your team MUST attend the Mandatory Cook Team Meeting at 9:00 AM on the day of the Cookoff as well as meat check at 9:30 am on the day of the cook off. Location: Downtown Senatobia, MS. Site area: 10 x 20 standard cooking site for cooking teams Water hook-ups and public port-a-potties will be available on-site at no charge. Individual Port-a-potties are available to rent. Some electrical hook-ups may be available for the first 10 teams that enter. You will need to bring a generator if you are not one of the first 10. Water hoses and extension cords not included. Registration: All teams must check in with the Director BEFORE setting up on Saturday, March 1st before setting up. Load in must be completed and all vehicles removed from the area by 9:30 AM. Teams may cook with any type of wood and/or charcoal. Other flammables (propane, compressed or liquid gas, etc.) may be used within the cooker ONLY to START the INITIAL fire. No type of flammable may be used within the cooker once the meat is on the cooker. Flammables may be used outside/ away from the cooker to make coals. All contestants MUST adhere to all electrical, fire, and other city, county, state or federal codes. A working fire extinguisher must be present. Electrical devices may be used within the cooker as long as they DO NOT generate heat. Approved devices include rotisseries, fans and delivery systems for approved fuels (e.g., Pitboss grills). Each team must comply with all applicable rules/regulations of the Tate County Health Department. NO MEAT/ENTRY/PRODUCT MAY BE SOLD. Meat for the contest may be fresh or frozen. Teams may NOT remove competition meat from the site after inspection. Each contestant competing must supply ALL of their own meat, cooking ingredients, individual cooking devices, utensils, preparation tables, etc. All competition entries must be prepared and cooked on site at the Beast and Brews Wild Game Cook and Steak-Off. No live animals/pets (dogs, pigs, etc.) are allowed in the cooking area. Sample containers (9”x9” clam shell box) are provided by the contest officials. No other containers are allowed for sample turn in. Each team is responsible for delivering their sample entries to a designated location on time announced at the cooks meeting. Late entries are not allowed. Garnish is allowed. The contest will be only ONE round of BLIND judging with the GRAND CHAMPION determined by the highest cumulative score of the food categories; FISH, FOWL, SMALL GAME, BIG GAME, SETUP, SIDES and DESSERT. Each team’s entries will be subjectively judged independently based on Appearance of Entry, Tenderness of Entry, Flavor, and Overall Impression. It is the responsibility of each team to keep the contest area clean. All fires must be put out and all equipment, garbage, etc., removed from site. Failure to clean up will result in disqualification from next year’s contest. The chief cook is responsible for the conduct of his team and guests. Any disturbances or altercations as a result of team members, guests or individuals in the team area are grounds for disqualification and expulsion from future contests. Fighting, taunting, or abusive language of any kind will not be tolerated. If your team engages in any of this activity they will be asked to leave immediately and disqualified from the cook off. Applications submitted are not guaranteed entrance. Accepted applicants will be contacted with information regarding the judging process, registration and parking. Decisions of the Director and judges are final. Violations of rules/regulations of the contest will result in disqualification, expulsion from grounds and/or both. AII entries must be cooked and finished on-site at the cookoff. Food may be marinated, chopped, or prepped prior to the cook off but it must be cooked on site. Teams are required to participate in a “meat check” the morning of the cook off at 9:30 am. A cook off official will walk around and visit each cook team. Teams are required to show the official their uncooked meat for each food category in order to be eligible for participation in the contest. All meat must be cooked on-site. All teams must present raw, uncooked meat at the beginning of the day. Meat that has been cooked, then frozen, is not considered raw and therefore not allowed in the cook-off. The only exception to this rule is a baked good without any meat in it. No ingredients or supplies will be allowed to be delivered to the cook off area after 10am. So please make sure that you have all your ingredients at the cook off area by this time. If you are suspected of bringing food in after 10 am, you will be disqualified. Please read carefully, a few notes about the categories; • Sides: This category does not require any wild game in it at all. • Best Set up- Picture the best tailgate set up you’ve ever seen, now recreate it! • Fish: Shellfish, muscles, and oysters ARE allowed in this category. Other examples include but are not limited to trout, bass, catfish, crappie, tuna, shrimp, salmon, etc. • Fowl: NO chicken allowed. Examples include but are not limited to turkey, duck, pheasant, dove, etc. • Small Game: Examples include but are not limited to rabbit, squirrel, etc. • Large Game: Examples include but are not limited to venison, elk etc. In order to win Grand Champion, you must be entered into all categories except drinks. Please be prepared to supply 8 appetizer-sized portions for judging. Judges will be seated in an enclosed area during judging times. Teams are in no way permitted to talk to judges about their dish prior to judging time. We encourage teams and judges to socialize and have fun during the day, but please be do not compromise the competition. No campers will be allowed inside the cooking area.
